My husband loves these muffins! When our blackberries are ripe-this is the first thing he requests I make with them. We enjoy these for breakfast when we are camping.

Ingredients
- 2 cups flour
- 1 tablespoon baking powder
- 1/4 cup sugar cookie mix
- 3/4 teaspoon salt
- 2 - eggs
- 1 cup milk
- 1/2 cup canola oil
- 1 1/2 teaspoons vanilla
- 1 cup fresh blackberries
How To Make blackberry muffins

Step 1Preheat oven to 400 degrees. Line a 12 cup muffin tin with paper liners.

Step 2In a med bowl, combine flour, baking powder, sugar, and salt. In a large bowl, beat eggs, milk, oil, and vanilla for 1 min on medium. Add flour mixture. Beat just until no streaks of flour remain-do not overmix! Fold in cup of blackberries.

Step 3Spoon batter into muffin cups. Bake for 18-20 min or until tops of muffins spring back when pressed lightly. Let cool in tin for a minute-then transfer muffins to a cooling rack.
