My husband loves these muffins! When our blackberries are ripe-this is the first thing he requests I make with them. We enjoy these for breakfast when we are camping.

Ingredients

2 c
flour
1 Tbsp
baking powder
1/4 c
sugar cookie mix
3/4 tsp
salt
2
eggs
1 c
milk
1/2 c
canola oil
1 1/2 tsp
vanilla
1 c
fresh blackberries

How to Make Blackberry muffins

Step-by-Step

  • 1Preheat oven to 400 degrees. Line a 12 cup muffin tin with paper liners.
  • 2In a med bowl, combine flour, baking powder, sugar, and salt. In a large bowl, beat eggs, milk, oil, and vanilla for 1 min on medium. Add flour mixture. Beat just until no streaks of flour remain-do not overmix! Fold in cup of blackberries.
  • 3Spoon batter into muffin cups. Bake for 18-20 min or until tops of muffins spring back when pressed lightly. Let cool in tin for a minute-then transfer muffins to a cooling rack.
