bisquick banana oat muffins
I didn't have quite enough ripe bananas for my banana muffin recipe, so I thought of mixing in applesauce to make up the difference. That led to adding oats and cinnamon, also. I turned out a wonderful, tasty banana-oat muffin that my family loved! Easy, especially using pre-mixed baking/biscuit mix. Use your own if you keep the homemade version on hand, otherwise Bisquick works beautifully.

Ingredients
- 1 cup mashed bananas (about 2)
- 1/2 cup applesauce
- 1/2 cup brown sugar, packed
- 1 - egg
- 1 1/2 teaspoons cinnamon, ground
- 2 cups bisquick baking mix
- 2/3 cup quick oats
- TOPPING
- 3 tablespoons brown sugar
- 3 tablespoons quick oats
- 2 tablespoons soft butter
- 1/4 cup chopped nuts
How To Make bisquick banana oat muffins

Step 1Preheat oven to 400°F. Grease a muffin pan or line with paper or silicon liners. Recipe makes 12 regular-size or 6 jumbo muffins.

Step 2Mash bananas in a large mixing bowl. Stir in applesauce, egg, brown sugar, and cinnamon until well mixed. Mix in Bisquick, then oats, until mixture is uniform. Spoon into muffin cups, filling 2/3 full.

Step 3In a small mixing bowl, cut together oats, sugar, and butter for topping until it's like small crumbs. Divide evenly on top of muffins. Finally, sprinkle tops with chopped nuts if desired.

Step 4Bake muffins for 24 - 28 minutes (for jumbo muffins; less time for regular-size) until done. Test with toothpick or cake tester. Cool on rack 10 minutes, then remove from pan and complete cooling.
