Best Ever Muffins

This is out of my old recipe box. I do not know where I got this one, probably from my sister.
When I want to make just a simple muffin, this is the one.
You can also fancy it up.

How to Make Best Ever Muffins

  1. Oven: 400 degrees
Stir together the flour, sugar, baking powder and salt with a wire whip.
  2. Make a well in center.
In another bowl, combine egg, milk and oil.
Add all at once to dry mixture.
    Stir just till moistened.
Fill well greased muffin pan 2/3 full.
Bake for 20 to 25 minutes.

    Blueberry/huckleberry & lemon muffins:
Prepare muffins as above, except combine berries, sugar.
Fold into batter along with grated lemon peal.
    Bake as directed.

While warm, dip in melted butter and then sugar.

I usually double this and make more muffins.
I use these extra for bread pudding or freeze 1/2 for use later.
