best banana muffins
I took a basic banana muffin recipe that I found years ago and modified it. My family and friends LOVE them and they are GREAT for a bake sale.

Makes 12-18 muffins
Ingredients
- 1/4 cup butter, softened (only butter!)
- 1 cup sugar
- 2 - eggs
- 1 1/2 cups all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 1/2 cups bananas (overly ripe, this is a must!)
- 3/4 cup sour cream (lite sour cream is ok too!)
- 1 1/2 teaspoons vanilla extract
How To Make best banana muffins

Step 1Preheat oven to 375 grease 18 regular size muffin tins or use paper baking cups.

Step 2Cream butter and sugar til light and fluffy. Add eggs. Sift dry ingredients together and mix w/ butter mixture. Add bananas and sour cream and vanilla. Mix ONLY til combined, this will keep the muffins fluffy. You DO NOT want to over mix this. Pour into prepared pans. Bake 20 min (or until lightly brown on top) Makes anywhere from 12 to 18 muffins, depending on how big you make them. ENJOY!!
