best banana chocolate chip muffins

This recipe comes from a very good friend of mine, and they are delicious muffins.

Ingredients

  • DRY INGREDIENTS
  • 2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chocolate chips
  • WET/OTHER INGREDIENTS
  • 2 eggs
  • 2 regular size bananas, or 5 small thai bananas, over ripe, mashed
  • 1 teaspoon vanilla extract
  • 3/4 cup sugar
  • 1/2 cup butter, room temp
  • 1/4 cup greek yogurt, regular yogurt, or sour cream

How To Make best banana chocolate chip muffins

  • Step 1
    Preheat your oven to 180° C (350° F). Get out your muffin pan and line with 12 muffin papers.
  • Step 2
    Mix all the dry ingredients together except the chocolate chips.
  • Step 3
    Mix all the wet/other ingredients together. I did use 4 small Thai bananas.
  • Step 4
    Pour the wet ingredients into the dry ingredients. Quickly mix until just combined, do not over mix.
  • Step 5
    Add the chocolate chips and give it a quick mix.
  • Step 6
    Spoon the batter into a muffin pan lined with paper liners. Fill each cell to almost full.
  • Step 7
    Bake in the preheated oven for 20 minutes or until they have rose and golden brown, they are done when a toothpick inserted in the center comes out clean.
  • Step 8
    Remove from the muffin pan and set on a rack to cool.
  • Step 9
    Serve and enjoy. Best the day they are baked.
