beautiful banana oat muffins
I wanted an oatmeal muffin recipe with lots of oat flavor, and I also had a couple of bananas that needed to be used. I did a quick search but didn't find exactly what I was looking for, so I experimented, using a basic muffin recipe to start. I think the brown sugar really makes a difference in these. Everyone loved them and agreed the oat flavor was perfect.

1 1/2 call purpose flour

1 cquick cooking oats

1/2 cbrown sugar, firmly packed

2 1/4 tspbaking powder

1 tspbaking soda

1/2 tspsalt

1 lgegg, beaten
-
3/4 cevaporated milk
-
1/3 cvegetable oil
-
1 tspvanilla
-
2ripe bananas, mashed
How To Make beautiful banana oat muffins

1Preheat oven to 400°F. Grease a 12-cup muffin pan.

2* In large bowl, stir together flour, oats, sugar, and dry ingredients. * In a separate bowl, combine egg, milk, oil, vanilla, and bananas.

3Add the banana mixture to the dry ingredients, and stir together lightly and quickly; do not over mix. Divide evenly among the muffin cups.

4Bake at 400°F for 20 to 22 minutes. Cool at least 5 minutes in pan.
