Beautiful Banana Oat Muffins

I wanted an oatmeal muffin recipe with lots of oat flavor, and I also had a couple of bananas that needed to be used. I did a quick search but didn't find exactly what I was looking for, so I experimented, using a basic muffin recipe to start. I think the brown sugar really makes a difference in these. Everyone loved them and agreed the oat flavor was perfect.

  • 1 1/2 c
    all purpose flour
  • 1 c
    quick cooking oats
  • 1/2 c
    brown sugar, firmly packed
  • 2 1/4 tsp
    baking powder
  • 1 tsp
    baking soda
  • 1/2 tsp
  • 1 large
    egg, beaten
  • 3/4 c
    evaporated milk
  • 1/3 c
    vegetable oil
  • 1 tsp
  • 2
    ripe bananas, mashed

How to Make Beautiful Banana Oat Muffins


  1. Preheat oven to 400°F. Grease a 12-cup muffin pan.
  2. * In large bowl, stir together flour, oats, sugar, and dry ingredients.
    * In a separate bowl, combine egg, milk, oil, vanilla, and bananas.
  3. Add the banana mixture to the dry ingredients, and stir together lightly and quickly; do not over mix.
    Divide evenly among the muffin cups.
  4. Bake at 400°F for 20 to 22 minutes. Cool at least 5 minutes in pan.
