I wanted an oatmeal muffin recipe with lots of oat flavor, and I also had a couple of bananas that needed to be used. I did a quick search but didn't find exactly what I was looking for, so I experimented, using a basic muffin recipe to start. I think the brown sugar really makes a difference in these. Everyone loved them and agreed the oat flavor was perfect.

Ingredients

  • 1 1/2 cups all purpose flour
  • 1 cup quick cooking oats
  • 1/2 cup brown sugar, firmly packed
  • 2 1/4 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 large egg, beaten
  • 3/4 cup evaporated milk
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla
  • 2 - ripe bananas, mashed

How To Make beautiful banana oat muffins

  • Step 1
    Preheat oven to 400°F. Grease a 12-cup muffin pan.
  • Step 2
    * In large bowl, stir together flour, oats, sugar, and dry ingredients. * In a separate bowl, combine egg, milk, oil, vanilla, and bananas.
  • Step 3
    Add the banana mixture to the dry ingredients, and stir together lightly and quickly; do not over mix. Divide evenly among the muffin cups.
  • Step 4
    Bake at 400°F for 20 to 22 minutes. Cool at least 5 minutes in pan.
