beautiful banana oat muffins
I wanted an oatmeal muffin recipe with lots of oat flavor, and I also had a couple of bananas that needed to be used. I did a quick search but didn't find exactly what I was looking for, so I experimented, using a basic muffin recipe to start. I think the brown sugar really makes a difference in these. Everyone loved them and agreed the oat flavor was perfect.

Ingredients
- 1 1/2 cups all purpose flour
- 1 cup quick cooking oats
- 1/2 cup brown sugar, firmly packed
- 2 1/4 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 large egg, beaten
- 3/4 cup evaporated milk
- 1/3 cup vegetable oil
- 1 teaspoon vanilla
- 2 - ripe bananas, mashed

Step 1Preheat oven to 400°F. Grease a 12-cup muffin pan.

Step 2* In large bowl, stir together flour, oats, sugar, and dry ingredients. * In a separate bowl, combine egg, milk, oil, vanilla, and bananas.

Step 3Add the banana mixture to the dry ingredients, and stir together lightly and quickly; do not over mix. Divide evenly among the muffin cups.

Step 4Bake at 400°F for 20 to 22 minutes. Cool at least 5 minutes in pan.
