barrel's blueberry almond muffins

I came up with this recipe to go along with my husbands book , he is a writer of fantasy books that carry dragons , witches , fairies,trolls,Ect he wanted some recipes to add to the books for Barrel the Dragon to make So I got busy. We tried them We loved them and so Did Barrel and Asia who's his long time friend and loves to eat. so Enjoy its simple but yummy.

Ingredients

  • 2 to 4 packages blueberry cream cheese muffin mix
  • 1 3/4 cups milk
  • 1/2 can blueberries in light juice (drained)
  • 2 tablespoons zest of large orange
  • 1 teaspoon almond extract
  • 1 teaspoon baking powder
  • 1/2 bag sliced almond pieces ( mine were roasted)
  • 1/4 cup olive oil

How To Make barrel's blueberry almond muffins

  • Step 1
    Follow directions on back of packages for the muffins , Adding the above ingredients.
  • Step 2
    preheat over to 425, grease tins (I sprayed them with Pam really well) and fill to 1/2 full place water in one with no batter place in over and bake till golden brown
  • Step 3
    Let cool for a few minutes then remove from pan they should come right out . enjoy with some nice Fairy home made butter. Enjoy!
