Ingredients For bara brith muffins

  • 1 c
    flour, unbleached
  • 2/3 c
    whole wheat pastry flour
  • 1/4 c
    brown sugar
  • 2 tsp
    baking powder
  • 1 tsp
    baking soda
  • 1/2 tsp
    nutmeg
  • 1/2 c
    raisins or sultanas
  • 1 c
    currants
  • 1
    egg
  • 2 Tbsp
    butter, melted
  • 1/2 c
    tea
  • 1/2 c
    buttermilk
  • 1 Tbsp
    molasses

How To Make bara brith muffins

  • 1
    Mix together flour, wheat flour, brown sugar, baking powder, soda and nutmeg.

    Mix in raisins and currants.

    In another bowl whisk egg with melted butter, tea, buttermilk and molasses. Quickly add the wet ingredients to the flour mixture, stirring 10 seconds.

    Spoon into greased muffin tins.

    Bake at 400 degrees 15-20 minutes.
