banana oatmeal muffins

I had so many over-ripe bananas and wanted to do something different than bread. I had made a lot of that so far this season. So I came up with this recipe using a basic muffin recipe. It turned out awesome. I hope you enjoy!

Blue Ribbon Recipe

If you've left bananas on the counter too long and don't want to make banana bread, whip up a batch of these banana oatmeal muffins. Moist and tender, they are sweet with a hint of ground cinnamon, ginger, and nutmeg. Thanks to the oats they're very filling and have a slightly chewy texture. Great for breakfast.

Ingredients

  • 1 1/2 cups granulated sugar
  • 2 cups old-fashioned oatmeal
  • 2 cups over-ripe bananas (about 4)
  • 1 cup milk
  • 2 large eggs
  • 4 tablespoons unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 tablespoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg

How To Make banana oatmeal muffins

  • Stir together sugar, oatmeal, bananas, milk, eggs, applesauce, and vanilla.
    Step 1
    Lightly oil the bottom of the muffin tin or use paper cups, which is what I do. Preheat oven to 350 degrees F. Stir together sugar, oatmeal, bananas, milk, eggs, applesauce, and vanilla. Set aside.
  • Sift flour, baking powder, baking soda, ginger, nutmeg, and cinnamon.
    Step 2
    Sift together (I use a wire whisk) flour, baking powder, baking soda, ginger, nutmeg, and cinnamon.
  • Stir into the banana mixture.
    Step 3
    Stir into the banana mixture just until well combined. Do not overmix.
  • Pour into your muffin tins.
    Step 4
    Pour into your muffin tins. Each cup should be about 2/3rds full.
  • Bake for 15 to 20 minutes.
    Step 5
    Bake for 15 to 20 minutes or until a toothpick comes out clean. They will be a beautiful golden brown when done.
