How to Make Banana Oatmeal Muffins

Step-by-Step

  1. Lightly oil bottom of muffin tin or use paper cups, which is what I do. Preheat oven to 350 degres.
  2. Stir together oatmael, bananas, milk, eggs, applesauce and vanilla. Set aside. Sift together (I just use a wire wisk) flour, Baking powder, baking soda, ginger, nutmeg and cinnamom stir into banana mixture just until well combined. Do not over mix.
  3. Pour into your muffin tins. Each cup should be aprox. 2/3rds full. Bake for 15 to 20 mins or until toothpick comes out clean. They will be a beautiful golden brown when done.
