Banana Oatmeal Muffins

I had so many over-ripe banans and wanted to do something differnt than bread. (made alot of that so far this season.) So I came up with this recipe using a basic muffin recipe. Turned out awesome, hope you enjoy!

Ingredients

2 c
old fashioned oatmeal
2 c
over-ripe bananas (aporx 4)
1 c
milk
2 large
eggs
4 Tbsp
unsweetened applesauce
1 1/2 c
sugar
1 tsp
vanilla
2 c
flour
2 Tbsp
baking powder
1 tsp
baking soda
1 tsp
cinnamon
1/2 tsp
ginger
1/4 tsp
nutmeg

How to Make Banana Oatmeal Muffins

Step-by-Step

  • 1Lightly oil bottom of muffin tin or use paper cups, which is what I do. Preheat oven to 350 degres.
  • 2Stir together oatmael, bananas, milk, eggs, applesauce and vanilla. Set aside. Sift together (I just use a wire wisk) flour, Baking powder, baking soda, ginger, nutmeg and cinnamom stir into banana mixture just until well combined. Do not over mix.
  • 3Pour into your muffin tins. Each cup should be aprox. 2/3rds full. Bake for 15 to 20 mins or until toothpick comes out clean. They will be a beautiful golden brown when done.
