How to Make Banana Oat Muffins

Step-by-Step

  1. Grease 12 muffin cups (don't use paper liners). Sometimes it makes less than 12, FYI.
  2. Combine dry ingredients (flour, sugar, oats, baking powder, salt, cinnamon, and nuts) in a large bowl. Make a well in the middle. Set aside.
  3. In a separate bowl, combine milk, egg, oil, and banana. Add all at once to dry ingredients. Mix just until moistened. Spoon into prepared muffin cups. OPTIONAL - sprinkle with cinnamon sugar.
  4. Bake at 400 degrees for 18-20 minutes. Cool in pan on wire rack for 5 minutes. Remove from cups and ENJOY!
  5. Different option: I made them with only white-whole-wheat flour, substituted chocolate chips for the chopped nuts, and left off the cinn/sugar topping. I enjoyed them :)
