banana oat muffins

Just made these a couple days ago, real good and moist

yield 12 regular or 6 jumbo muffins

Ingredients

  • 1/2 stick sweet butter
  • 1/3 cup sugar
  • 1/3 cup honey
  • 2 - eggs
  • 3 - mashed bananas
  • 3/4 cup flour
  • 3/4 ounce oatmeal
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda

How To Make banana oat muffins

  • Step 1
    Pre-heat oven to 375. Grease a muffin tin for 12. Mix softened butter with sugar in a larger bowl. Using a mixer, add one egg at time and beat until blended. Add the bananas and the honey and mix gently. Stir in all the dry ingredients and mix until blended. Add walnuts to mixture. Then evenly distribute into muffin tin. Bake for 20-25 minutes or until a toothpick comes out clean. Rotate muffin tin half way through for best results. Let muffins cool for 10 minutes then lift out of muffin tin and rest on side in the muffin tin.
