banana nut muffins

Just made these this morning but instead of pecans, I put organic pumpkin seeds! So good!

Ingredients

  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon nutmeg
  • 1/2 - salt
  • 1 stick unsalted butter
  • 3/4 cup sugar
  • 2 - eggs
  • 3 - overripe bananas, mashed
  • 1/4 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 cup pecans, chopped

How To Make banana nut muffins

  • Step 1
    Preheat oven to 375.
  • Step 2
    Line muffin tin with paper liners.
  • Step 3
    Stir in flour, baking powder, baking soda, nutmeg and salt together in a large bowl.
  • Step 4
    In a seperate bowl, beat butter and sugar together until creamy.
  • Step 5
    Beat in eggs, bananas, sour cream and vanilla and stir to mix well.
  • Step 6
    Add flour mixture to the butter-sugar mixture and stir until flour is moist.
  • Step 7
    Gently stir in pecans.
  • Step 8
    Spoon batter into a muffin tin to just below top of liner.
  • Step 9
    Bake muffins 20-25 minutes or until a toothpick comes out clean.
