banana nut muffins
Just made these this morning but instead of pecans, I put organic pumpkin seeds! So good!

Ingredients
- 2 cups all purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon nutmeg
- 1/2 - salt
- 1 stick unsalted butter
- 3/4 cup sugar
- 2 - eggs
- 3 - overripe bananas, mashed
- 1/4 cup sour cream
- 1 teaspoon vanilla extract
- 1 cup pecans, chopped
How To Make banana nut muffins

Step 1Preheat oven to 375.

Step 2Line muffin tin with paper liners.

Step 3Stir in flour, baking powder, baking soda, nutmeg and salt together in a large bowl.

Step 4In a seperate bowl, beat butter and sugar together until creamy.

Step 5Beat in eggs, bananas, sour cream and vanilla and stir to mix well.

Step 6Add flour mixture to the butter-sugar mixture and stir until flour is moist.

Step 7Gently stir in pecans.

Step 8Spoon batter into a muffin tin to just below top of liner.

Step 9Bake muffins 20-25 minutes or until a toothpick comes out clean.
