Just made these this morning but instead of pecans, I put organic pumpkin seeds! So good!

Ingredients

all purpose flour
2 tsp
baking powder
1/2 tsp
baking soda
1/2 tsp
nutmeg
1/2
salt
1 stick
unsalted butter
3/4 c
sugar
2
eggs
3
overripe bananas, mashed
1/4 c
sour cream
1 tsp
vanilla extract
1 c
pecans, chopped

How to Make Banana Nut Muffins

Step-by-Step

  • 1Preheat oven to 375.
  • 2Line muffin tin with paper liners.
  • 3Stir in flour, baking powder, baking soda, nutmeg and salt together in a large bowl.
  • 4In a seperate bowl, beat butter and sugar together until creamy.
  • 5Beat in eggs, bananas, sour cream and vanilla and stir to mix well.
  • 6Add flour mixture to the butter-sugar mixture and stir until flour is moist.
  • 7Gently stir in pecans.
  • 8Spoon batter into a muffin tin to just below top of liner.
  • 9Bake muffins 20-25 minutes or until a toothpick comes out clean.
