Ingredients
- 1/2 cup softened butter
- 1/2 cup sugar
- 1 - egg
- 1 cup mashed bananas
- 1 teaspoon baking soda
- 1 1/2 cups flour
- 1/4 teaspoon salt
- 1 teaspoon ground nutmeg
- 1/2 cup chopped walnuts--optional
How To Make banana muffins

Step 1In a large bowl, cream butter and sugar with electric mixer.

Step 2Add egg, mashed bananas, and baking soda which has been dissolved in 1 T. hot water

Step 3In a smaller bowl, combine well the flour, salt, nutmeg, and nuts.

Step 4Combine the wet and dry ingredients and gold together gently until just mixed. Spoon into prepared muffin pan and decorate top of each muffin with a walnut half.

Step 5Bake at 375 for 20 minutes. Remove from pan and cool on rack.
