How to Make Banana Muffins
- In a large bowl, cream butter and sugar with electric mixer.
- Add egg, mashed bananas, and baking soda which has been dissolved in 1 T. hot water
- In a smaller bowl, combine well the flour, salt, nutmeg, and nuts.
- Combine the wet and dry ingredients and gold together gently until just mixed. Spoon into prepared muffin pan and decorate top of each muffin with a walnut half.
- Bake at 375 for 20 minutes.
Remove from pan and cool on rack.
