- - 2 1/2 cups flour
- - 1 1/2 tsp. baking powder
- - 1 tsp. baking soda
- - 1 tsp. salt
- - 1 cup vegetable shortening
- - 1 1/2 cups sugar
- - 3/4 cup milk
- - 2 eggs
- - 1 cup mashed banana
- - 1 tbsp. lemon juice
- - 1 tsp. vanilla extract
- - 8 chocolate chunks cookies, from kirkland, crushed

Step 1Preheat oven to 350.

Step 2In bowl, sift together flour, baking powder, baking soda and salt. In another bowl beat together shortening and sugar with mixer. Add milk, eggs, banana, lemon juice and vanilla. Mix to combine well. Add sifted dry ingredients and mix just til smooth.

Step 3Put crushed cookies in 24 greased muffin cups and top with the banana mixture. Bake for 25 to 35 minutes or til a toothpick comes out clean. make 24 cupcakes.
