  • 2 1/2 cups flour
  • 1 1/2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 cup vegetable shortening
  • 1 1/2 cups sugar
  • 3/4 cup milk
  • 2 eggs
  • 1 cup mashed banana
  • 1 tbsp. lemon juice
  • 1 tsp. vanilla extract
  • 8 chocolate chunks cookies, from kirkland, crushed

How To Make banana cupcakes with belgian chunk cookie bottoms

    Preheat oven to 350.

    In bowl, sift together flour, baking powder, baking soda and salt. In another bowl beat together shortening and sugar with mixer. Add milk, eggs, banana, lemon juice and vanilla. Mix to combine well. Add sifted dry ingredients and mix just til smooth.

    Put crushed cookies in 24 greased muffin cups and top with the banana mixture. Bake for 25 to 35 minutes or til a toothpick comes out clean. make 24 cupcakes.
