We can't think of a better way to start the day than with these banana coffee muffins. These muffins are similar to banana bread. They're moist, soft, sweet, and filled with banana flavor. We love the slight coffee flavor in them. Walnuts add a nice crunch. Grab one and enjoy them on the go or warm at home and enjoy with a cup of coffee.

Ingredients
- 3-4 - ripe bananas
- 1/3 cup butter, melted
- 3/4 cup granulated sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 3 tablespoons espresso/coffee
- 1 teaspoon baking soda
- 1 pinch salt
- 1 1/2 cups all-purpose flour
- 1 cup walnuts, chopped
- 1 - muffin pan
- 1 package muffin/cupcake wrapper
How To Make banana coffee muffins "breakfast perfection"

Step 1Preheat oven to 350 degrees. Mash bananas (3-4) in a large bowl.

Step 2Melt the butter (1/3 cup) and mix into the bowl of bananas with a large wooden spoon.

Step 3Beat the 1 egg.

Step 4Mix egg, sugar (3/4 cup), coffee (3 Tbsp), and vanilla in a mixing bowl and stir.

Step 5Mix in baking soda (1 tsp) and a pinch of salt. Keep on stirring. Add flour (1 1/2 cups).

Step 6Add banana mixture.

Step 7Fold in walnuts (1 cup).

Step 8Insert muffin wrappers into the muffin pan. Pour mixture into muffins pan. Fill each only halfway.

Step 9Bake for 25-30 minutes. Check the middle with a toothpick to see if baked.
