banana chocolate chip muffins
My kids beg me to make these!! I healthy them up a little by using only 1 c. of a.p. flour and then 3/4 c. of whole wheat flour. I also use half coconut oil and half light olive oil (it doesn't taste like olive oil!!).

Ingredients
- 1 3/4 cups all-purpose flour
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup sugar
- 1 1/4 teaspoons cream of tartar
- 2 - eggs, beaten
- 1/2 cup vegetable oil
- 2 - ripe bananas, mashed
- 1/8 cup milk (or a little more to make batter a bit more moist)
- 8 ounces chocolate chips

Step 1Preheat oven to 400. Combine first 5 ingredients together in a large bowl.

Step 2In a separate bowl, combine remaining ingredients except chocolate chips.

Step 3Add wet ingredients to dry ingredients. Mix chocolate chips until well combined. Spoon into a sprayed muffin pan. Bake for about 18 minutes.
