My kids beg me to make these!! I healthy them up a little by using only 1 c. of a.p. flour and then 3/4 c. of whole wheat flour. I also use half coconut oil and half light olive oil (it doesn't taste like olive oil!!).

Ingredients

  • 1 3/4 c
    all-purpose flour
  • 3/4 tsp
    baking soda
  • 1/2 tsp
    salt
  • 1/2 c
    sugar
  • 1 1/4 tsp
    cream of tartar
  • 2
    eggs, beaten
  • 1/2 c
    vegetable oil
  • 2
    ripe bananas, mashed
  • 1/8 c
    milk (or a little more to make batter a bit more moist)
  • 8 oz
    chocolate chips

How to Make Banana Chocolate Chip Muffins

Step-by-Step

  1. Preheat oven to 400. Combine first 5 ingredients together in a large bowl.
  2. In a separate bowl, combine remaining ingredients except chocolate chips.
  3. Add wet ingredients to dry ingredients. Mix chocolate chips until well combined. Spoon into a sprayed muffin pan. Bake for about 18 minutes.
