I love bananas and I love chocolate. If you find a real good deal on lots of bananas, let them get very ripe (the riper the better the flavor) and then just put them in the freezer, as is with the peel still on, and they freeze beautifully. Thaw when you want to use them. They are black at this stage and don't look pretty and when thawed are limp and soft, but work perfectly in baking and very easy to mash.

Ingredients

  • 8 cups flour
  • 1 tablespoon plus 2 tsp. baking powder
  • 1 1/2 tablespoons salt
  • 1 pound butter
  • 2 cups brown sugar
  • 8 cups bananas, mashed (about 16)
  • 8 - eggs
  • 1 1/3 cups milk
  • 1 tablespoon plus 1 tsp. vanilla
  • 3 cups walnuts, toasted
  • 3 cups chocolate chips

How To Make banana chocolate chip muffins

  • Step 1
    Combine dry ingredients except sugar in a LARGE bowl or tub and set aside.
  • Step 2
    Cream butter and sugar, beat in eggs, stir in milk, vanilla and mashed bananas.
  • Step 3
    Add wet ingredients to dry ingredients using a large spoon and big strokes to just combine the mixture. Do not over mix.
  • Step 4
    Carefully spoon into well greased muffin tins. Bake at 400 degrees until done (15 minutes approx)
