My mom always made the best banana bread! And she used a recipe that called for several overripe bananas, which makes it moist and gives it a ton of flavor. Sometimes, I just don't want to wait an hour to make the loaf, so I took the same recipe and made muffins. Now I get the banana bread taste I adore in about 20 minutes. Hope you banana lovers enjoy =)

How to Make Banana Bread Muffins

Step-by-Step

  1. Preheat oven to 350 degrees and spray or line muffin tins.
  2. Combine all dry ingredients. (To make oat flour, you can just grind rolled oats in a coffee grinder. Or you can skip this step, and just add oats)
  3. Combine all wet ingredients and mix well.
  4. Pour wet mixture into the dry ingredients and stir just to combine.
  5. Fill muffin tins about 2/3 full and bake for 15-20 minutes. Press lightly on the the top of a muffin. If it springs back, the muffins are done.
