banana bread muffins

My mom always made the best banana bread! And she used a recipe that called for several overripe bananas, which makes it moist and gives it a ton of flavor. Sometimes, I just don't want to wait an hour to make the loaf, so I took the same recipe and made muffins. Now I get the banana bread taste I adore in about 20 minutes. Hope you banana lovers enjoy =)

Ingredients
- DRY INGREDIENTS
- 1 cup oat flour or rolled oats
- 1/2 cup whole wheat flour
- 1/2 cup all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- WET INGREDIENTS
- 1/2 cup yogurt, (full fat works best)
- 1/2 cup brown sugar (or substitute stevia for part of this)
- 2 - eggs
- 5 - overripe mashed bananas
- 1 teaspoon vanilla extract
How To Make banana bread muffins

Step 1Preheat oven to 350 degrees and spray or line muffin tins.

Step 2Combine all dry ingredients. (To make oat flour, you can just grind rolled oats in a coffee grinder. Or you can skip this step, and just add oats)

Step 3Combine all wet ingredients and mix well.

Step 4Pour wet mixture into the dry ingredients and stir just to combine.

Step 5Fill muffin tins about 2/3 full and bake for 15-20 minutes. Press lightly on the the top of a muffin. If it springs back, the muffins are done.

Step 6Cool for 10 minutes before serving.
