My Bunch Like's These Muffins,They Take Them With Them,And I Take Some With Me In The Car When I Go Very For From Home As I Have Diabetes And Hypoglycemia.I Take A Lot Of Food That's Handy In The Car,I Have To Eat A Little Every 2 1/2-3 Hours,So I Stay Home A Lot, Try These Muffins Their Great Any Time! cook these 20-28 minutes,or until tooth pick comes out clean on the test.

Ingredients
- 2 cups sifted flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 3 tablespoons sugar
- 1 medium egg
- 1 cup milk
- 3 tablespoons oil or melted shortening
- 4 - slices bacon
- 1/2 cup chopped mushrooms
How To Make bacon mushroom muffins

Step 1preheat oven to 425*

Step 2fry bacon and mushrooms together until bacon is crisp.

Step 3dry on a paper towel to remove excess fat,and crumble the bacon.

Step 4sift together dry ingredients,combine eggs,milk,oil,bacon and mushrooms in a separate bowl.

Step 5add bacon mixture to the dry mixture and stir until dry ingredients are moistened,but still lumpy- about 20 strokes.

Step 6spoon batter into greasd muffin pans,filling about 2/3 full.

Step 7bake 20-28 minutes depending on muffin size.

Step 8makes about 18 medium size muffins.
