My Bunch Like's These Muffins,They Take Them With Them,And I Take Some With Me In The Car When I Go Very For From Home As I Have Diabetes And Hypoglycemia.I Take A Lot Of Food That's Handy In The Car,I Have To Eat A Little Every 2 1/2-3 Hours,So I Stay Home A Lot, Try These Muffins Their Great Any Time! cook these 20-28 minutes,or until tooth pick comes out clean on the test.

Ingredients

  • 2 cups sifted flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 3 tablespoons sugar
  • 1 medium egg
  • 1 cup milk
  • 3 tablespoons oil or melted shortening
  • 4 - slices bacon
  • 1/2 cup chopped mushrooms

How To Make bacon mushroom muffins

  • Step 1
    preheat oven to 425*
  • Step 2
    fry bacon and mushrooms together until bacon is crisp.
  • Step 3
    dry on a paper towel to remove excess fat,and crumble the bacon.
  • Step 4
    sift together dry ingredients,combine eggs,milk,oil,bacon and mushrooms in a separate bowl.
  • Step 5
    add bacon mixture to the dry mixture and stir until dry ingredients are moistened,but still lumpy- about 20 strokes.
  • Step 6
    spoon batter into greasd muffin pans,filling about 2/3 full.
  • Step 7
    bake 20-28 minutes depending on muffin size.
  • Step 8
    makes about 18 medium size muffins.
