Ok whoever was the person who made this recipe up....is pure genius in my book. I mean cmon now you can't go wrong with bacon.....and in a muffin no less!

Ingredients

  • 1 pound bacon
  • 1 1/2 cups flour
  • 1 tablespoon baking powder
  • 1/2 cup butter
  • 1 - egg,beaten
  • 1/2 cup heavy cream
  • 1 cup grated sharp cheddar
  • 3 - green onion,sliced
  • 1 tablespoon caraway seeds

How To Make bacon muffins

  • Step 1
    Preheat oven to 400.
  • Step 2
    Fry the bacon. Drain excess fat,reserving 1 tbsp. Dice and crumble the bacon.
  • Step 3
    In a bowl, sift together the flour and baking powder. Cut in the butter. Stir in the egg and cream.
  • Step 4
    Add the bacon,cheese and green onions.
  • Step 5
    Grease 12 muffin tins with reserved bacon fat.
  • Step 6
    Drop batter into each cup,filling to 3/4. Sprinkle with caraway seeds.
  • Step 7
    Bake in oven 15 to 20 minutes or until golden brown. Serve hot.
