Ingredients

  • 1/2 lb
    bacon
  • ·
    vegetable oil
  • 1
    egg, beaten
  • 3/4 c
    milk
  • 1 3/4 c
    all purpose flour
  • 1/4 c
    sugar
  • 1/2 c
    crunchy nugget cereal
  • 1 c
    shredded cheddar cheese

How to Make Bacon Cheese Muffins

Step-by-Step

  1. Cook bacon-drain but reserve dripping, if necessary add vegetable oil to measure 1/3 cup total.
  2. In a small bowl combine dripping/oil, egg and milk - set aside.
  3. Crumble bacon, set aside.
  4. In a large bowl, combine dry ingredients, make a well in center.
  5. Add wet mixture all at once; stir just until moistened. Batter will be lumpy.
  6. Stir in cheese, bacon and cereal.
  7. Fill greased or lined muffin cups 3/4 full.
  8. Bake at 400 for 15-20 minutes. Makes 12.
