bacon chedder muffins

When making muffins,don't grease the cups that won't be filled since the fat will burn and make your pan hard to clean. Instead,add 2 or 3 tablespoons of water to any empty cups to keep the pan from heating unevenly and/or warp in the oven.

Ingredients

  • 2 cups flour
  • 3/4 cup sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup plus 2 tablespoons milk
  • 1/3 cup butter,melted and cooled
  • 1 large egg
  • 1 cup (4oz) shredded chedder cheese
  • 6 slices bacon,crisp cooked and crumbled

How To Make bacon chedder muffins

  • Step 1
    Preheat oven to 350. Grease 12 standard(2 1/2")muffin cups.
  • Step 2
    Combine the 1st-5 ingredients in a medium bowl. Combine milk,butter,egg in a small bowl;mix well. Add milk mixture to flour mixture;stir just until blended. Gently stir in cheese and bacon. Spoon batter into prepared muffin cups,filling 3/4 full.
  • Step 3
    Bake 15-20 minutes or until toothpick inserted into center comes out clean. Cool in pan 2 minutes;remove to wire rack. Serve warm or at room temperature.
