    corn muffin mix
  • 1/3 c
    self-rising flour
  • 4 oz
    bacon, cooked and chopped
  • 1 c
    cheddar cheese, shredded
  • 1 Tbsp
    fresh parsley, chopped
  • 1 Tbsp
    fresh chopped chives
  • 1 tsp
    garlic powder
  • 1 tsp
    onion powder
  • 1 c
    milk
  • 1 large
    egg
  • 3 Tbsp
    bacon fat

How to Make Bacon Cheddar Mini Biscuit Muffins

Step-by-Step

  1. preheat oven to 335 degrees. grease mini muffin molds with some of the bacon grease.
  2. in a mixing bowl, combine ingredients 1-8, mix well. in a separate bowl, combine ingredients 9-11. mix well. combine the wet ingredients to the dry ingredients. mix well
  3. put 1 tbsp of the muffin mixture in 24 mini muffin molds. bake for 12-15 minutes or until golden brown. remove and place on a cooling rack
  4. Drizzle with butter pecan maple syrup or honey and extra butter!
