Ingredients

  • 7 1/2 ounces corn muffin mix
  • 1/3 cup self-rising flour
  • 4 ounces bacon, cooked and chopped
  • 1 cup cheddar cheese, shredded
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh chopped chives
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup milk
  • 1 large egg
  • 3 tablespoons bacon fat

How To Make bacon cheddar mini biscuit muffins

  • Step 1
    preheat oven to 335 degrees. grease mini muffin molds with some of the bacon grease.
  • Step 2
    in a mixing bowl, combine ingredients 1-8, mix well. in a separate bowl, combine ingredients 9-11. mix well. combine the wet ingredients to the dry ingredients. mix well
  • Step 3
    put 1 tbsp of the muffin mixture in 24 mini muffin molds. bake for 12-15 minutes or until golden brown. remove and place on a cooling rack
  • Step 4
    Drizzle with butter pecan maple syrup or honey and extra butter!
