apple streusel muffins

I love bread of all kinds and muffins are always a hit! This recipe is a bit different from the original oly because I didnt have sour cream and improvished a little.

Ingredients

  • TOPPING
  • 1/2 cup chopped pecans
  • 1/4 cup flour
  • 2 tablespoons butter, melted
  • 3 tablespoons sugar
  • 1/4 teaspoon cinnamon
  • BATTER
  • 1 & 1/2 cups flour
  • 1/2 cup brown sugar, lightly packed
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon allspice
  • 1/4 teaspoon salt
  • WET INGREDIENTS FOR BATTER
  • 1 - large granny smith apple or two small apples,cored and diced
  • 1 - container of vanilla yoghurt
  • 1/2 cup water
  • 1/4 cup butter, melted
  • 2 - eggs, beaten

How To Make apple streusel muffins

  • Step 1
    Preheat your oven to 375 Degrees Fahrenheit. Make sure your oven rack is set in the middle.
  • Step 2
    Grease you muffin tin and set aside.
  • Step 3
    Mix the ingredients for the topping and set aside.
  • Step 4
    Peel, core and dice the apples and set aside.
  • Step 5
    Mix the wet ingredients for the batter in a separate bowl and add the apples to the mix.
  • Step 6
    Mix all the dry ingredients for the batter in a large bowl and add the apple mixture. Be careful not to overmix, as this makes muffins tough.
  • Step 7
    Spoon the batter into the muffin tin until almost full.
  • Step 8
    Spoon the streusel topping onto each muffin top. You may have some left over.
  • Step 9
    Bake at 375 for 25-30 minutes or until knife inserted in center comes out clean.
