I love bread of all kinds and muffins are always a hit! This recipe is a bit different from the original oly because I didnt have sour cream and improvished a little.

Ingredients

TOPPING

1/2 c
chopped pecans
1/4 c
flour
2 Tbsp
butter, melted
3 Tbsp
sugar
1/4 tsp
cinnamon

BATTER

1 & 1/2 c
flour
1/2 c
brown sugar, lightly packed
2 tsp
baking powder
1/4 tsp
baking soda
1 tsp
cinnamon
1/4 tsp
allspice
1/4 tsp
salt

WET INGREDIENTS FOR BATTER

1
large granny smith apple or two small apples,cored and diced
1
container of vanilla yoghurt
1/2 c
water
1/4 c
butter, melted
2
eggs, beaten

How to Make Apple Streusel Muffins

Step-by-Step

  • 1Preheat your oven to 375 Degrees Fahrenheit.
    Make sure your oven rack is set in the middle.
  • 2Grease you muffin tin and set aside.
  • 3Mix the ingredients for the topping and set aside.
  • 4Peel, core and dice the apples and set aside.
  • 5Mix the wet ingredients for the batter in a separate bowl and add the apples to the mix.
  • 6Mix all the dry ingredients for the batter in a large bowl and add the apple mixture.
    Be careful not to overmix, as this makes muffins tough.
  • 7Spoon the batter into the muffin tin until almost full.
  • 8Spoon the streusel topping onto each muffin top.
    You may have some left over.
  • 9Bake at 375 for 25-30 minutes or until knife inserted in center comes out clean.
