I love bread of all kinds and muffins are always a hit! This recipe is a bit different from the original oly because I didnt have sour cream and improvished a little.

Ingredients

  • 1/2 c
    chopped pecans
  • 1/4 c
    flour
  • 2 Tbsp
    butter, melted
  • 3 Tbsp
    sugar
  • 1/4 tsp
    cinnamon
  • BATTER

  • 1 & 1/2 c
    flour
  • 1/2 c
    brown sugar, lightly packed
  • 2 tsp
    baking powder
  • 1/4 tsp
    baking soda
  • 1 tsp
    cinnamon
  • 1/4 tsp
    allspice
  • 1/4 tsp
    salt
  • WET INGREDIENTS FOR BATTER

  • 1
    large granny smith apple or two small apples,cored and diced
  • 1
    container of vanilla yoghurt
  • 1/2 c
    water
  • 1/4 c
    butter, melted
  • 2
    eggs, beaten

How to Make Apple Streusel Muffins

Step-by-Step

  1. Preheat your oven to 375 Degrees Fahrenheit.
    Make sure your oven rack is set in the middle.
  2. Grease you muffin tin and set aside.
  3. Mix the ingredients for the topping and set aside.
  4. Peel, core and dice the apples and set aside.
  5. Mix the wet ingredients for the batter in a separate bowl and add the apples to the mix.
  6. Mix all the dry ingredients for the batter in a large bowl and add the apple mixture.
    Be careful not to overmix, as this makes muffins tough.
  7. Spoon the batter into the muffin tin until almost full.
  8. Spoon the streusel topping onto each muffin top.
    You may have some left over.
  9. Bake at 375 for 25-30 minutes or until knife inserted in center comes out clean.
