This has always been a family favorite. My grandmother used to bake them for my mother and her siblings. My mother carried on the tradition and shared these yummy muffins with my siblings and I. I enjoy baking them early in the morning when the sun is shinning in my kitchen and I am sipping on coffee. Breakfast is never bad when these muffins are served!

ground cinnamon

baking powder
1/2 tsp
baking soda

grated carrots

apple- peeled, cored, and chopped
1 c
1 large
egg whites
1/2 c
apple butter
1/4 c
vegetable oil
1 Tbsp
vanilla extract
2 Tbsp
chopped walnuts
2 Tbsp
toasted wheat germ

How to Make Apple-Raisin Morning muffins


  • 1Preheat oven to 375 degrees F. Lightly oil 18 muffin cups, or coat with nonstick cooking spray.
  • 2In a medium bowl, whisk together eggs, egg whites, apple butter, oil, and vanilla.
  • 3In a small bowl, combine walnuts and wheat germ; sprinkle over each muffin top.
  • 4Place muffin pan in oven and bake at 375 degrees F for 15-20 minutes, or until the tops are golden brown and spring back when lightly pressed.
