apple pie muffins
I made these for the first time Christmas morning and everybody just loved them. They are so moist and deee-lish!

What could be better than waking up on a fall morning to the smell of apple pie muffins? Super moist, the muffins are buttery with chunks of apple inside. On top is a delicious cinnamon-spiced crumble. They kind of taste like apple strudel. Yum!

Ingredients
- CRUMB TOPPING
- 1/2 cup brown sugar, firmly packed
- 1/3 cup all-purpose flour
- 1/4 cup unsalted butter, softened
- 1 teaspoon cinnamon
- MUFFINS
- 1 1/2 cups brown sugar, firmly packed
- 2/3 cup canola oil (can use vegetable oil)
- 1 large egg
- 1 1/2 teaspoons vanilla extract
- 1 teaspoon cinnamon
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup buttermilk
- 3 cups peeled and diced firm tart apples (I use granny smith)
How To Make apple pie muffins

Step 1Topping: In a small bowl, toss together sugar, flour, butter, and cinnamon until crumbly; set aside.

Step 2Muffins: In a large bowl, whisk together brown sugar, oil, egg, cinnamon, and vanilla until smooth.

Step 3In a separate bowl, sift together flour, soda, and salt.

Step 4Stir flour into the oil mixture alternately with buttermilk.

Step 5Add until completely incorporated.

Step 6Fold in apples, mixing just until combined.

Step 7Spoon into greased muffin cups filling 3/4 full.

Step 8Sprinkle topping over evenly.

Step 9Bake at 350 F for 25-30 mins or until golden brown and tops spring back.
