I made these for the first time Christmas morning and everybody just loved them. They are so moist and deee-lish!

Ingredients

  • CRUMB TOPPING

  • 1/2 c
    brown sugar, firmly packed
  • 1/3 c
    all-purpose flour
  • 1/4 c
    unsalted butter, softened
  • 1 tsp
    cinnamon
  • MUFFINS

  • 1 1/2 c
    brown sugar, firmly packed
  • 2/3 c
    canola oil (i just used reg. veg oil)
  • 1
    egg
  • 1 1/2 tsp
    vanilla
  • 1 tsp
    cinnamon
  • 2 1/2 c
    all purpose flour
  • 1 tsp
    baking soda
  • 1/4 tsp
    salt
  • 1 c
    buttermilk
  • 3 c
    diced firm tart apples (i used granny smith)

How to Make Apple Pie Muffins

Step-by-Step

  1. Topping: In a small bowl toss together sugar, flour butter and cinnamon until crumbly; set aside.
  2. Muffins: In a large bowl whisk together brown sugar, oil, egg, cinnamon, and vanilla until smooth. In a separate bowl, sift together flour, soda and salt. Stir oil mixture alternately with buttermilk. Fold in apples, mixing just until combined. Spoon into greased muffin cups filling 3/4 full. Sprinkle topping over evenly. Bake at 350º for 25-30 mins or until golden brown and tops spring back.
