I made these for the first time Christmas morning and everybody just loved them. They are so moist and deee-lish!

What could be better than waking up on a fall morning to the smell of apple pie muffins? Super moist, the muffins are buttery with chunks of apple inside. On top is a delicious cinnamon-spiced crumble. They kind of taste like apple strudel. Yum!

Ingredients

  • CRUMB TOPPING
  • 1/2 cup brown sugar, firmly packed
  • 1/3 cup all-purpose flour
  • 1/4 cup unsalted butter, softened
  • 1 teaspoon cinnamon
  • MUFFINS
  • 1 1/2 cups brown sugar, firmly packed
  • 2/3 cup canola oil (can use vegetable oil)
  • 1 large egg
  • 1 1/2 teaspoons vanilla extract
  • 1 teaspoon cinnamon
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 3 cups peeled and diced firm tart apples (I use granny smith)

How To Make apple pie muffins

  • Sugar, flour, butter, and cinnamon combined for topping.
    Step 1
    Topping: In a small bowl, toss together sugar, flour, butter, and cinnamon until crumbly; set aside.
  • Brown sugar, oil, egg, cinnamon, and vanilla combined for muffins.
    Step 2
    Muffins: In a large bowl, whisk together brown sugar, oil, egg, cinnamon, and vanilla until smooth.
  • Sifting together flour, soda, and salt.
    Step 3
    In a separate bowl, sift together flour, soda, and salt.
  • Alternatively adding flour and buttermilk.
    Step 4
    Stir flour into the oil mixture alternately with buttermilk.
  • Ingredients completely incorporated.
    Step 5
    Add until completely incorporated.
  • Apples folded into the batter.
    Step 6
    Fold in apples, mixing just until combined.
  • Batter in muffin tins.
    Step 7
    Spoon into greased muffin cups filling 3/4 full.
  • Crumbs sprinkled on top.
    Step 8
    Sprinkle topping over evenly.
  • Baked Apple Pie Muffins cooling.
    Step 9
    Bake at 350 F for 25-30 mins or until golden brown and tops spring back.
