apple nut muffins

I believe this came out of a past issue of the King Arthur Flour Baker's Catalogue. The Domino Sugar advertisement had this in their ad. I could eat the whole muffin tin full, well, almost! These are really wonderful and oh so delicious! You have to try these.

Ingredients
- 1 - egg
- 2/3 cup apple juice or milk
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 2 cups all purpose flour
- 1/4 cup granulated sugar
- 1/4 cup brown sugar, light and firmly packed
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup chopped nuts
- 1 - apple, chopped
- - domino sugar and cinnamon
How To Make apple nut muffins

Step 1Grease 12 medium muffin cups or line with paper baking cups.

Step 2In bowl, beat egg with juice, oil and vanilla. Stir in flour, sugars, baking powder, and salt just until flour is moistened. (batter will be lumpy). Stir in nuts and apple. Fill prepared muffin cups, sprinkle with sugar and cinnamon.

Step 3Bake at 400 degrees F about 20 minutes or until golden brown. Immediately remove from pan.
