Ingredients
- 1 - egg, beaten
- 3 tablespoons sugar
- 1/4 cup milk
- 1/4 cup butter, melted
- 1 1/4 cups flour
- 1 1/2 teaspoons baking powder
- - pinch of salt
- 1/2 teaspoon cinnamon
- 2 - apples, peeled, cored and finely chopped
- 3 tablespoons raw sugar
- 1 teaspoon cinnamon
How To Make apple-cinnamon muffins

Step 1Preheat oven to 400°. Line large muffin pan with paper liners.

Step 2Mix egg, sugar, milk and melted butter in large bowl.

Step 3Sift in the flour, baking powder, salt and cinnamon.

Step 4Add the chopped apple and mix coarsely. (Tip: Do not over mix the muffin mixture - it should be lumpy.)

Step 5Spoon the miffin batter into the paper-lined muffin pan.

Step 6Make topping mix by mixing raw sugar with remaining 1 teaspoon of cinnamon. Sprinkle over the uncooked muffins.

Step 7Bake for 30-35 minutes, until golden brown.

Step 8Transfer to wire rack to cool.
