Ingredients
- 1 cup rice flour (i used brown but you can use white if you want)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 2 small eggs
- 3 1/2 tablespoons olive oil
- 3 tablespoons milk
- 1 large apple peeled and then grated
- 1 tablespoon cinnamon
How To Make apple cinnamon muffins

Step 1Preaheat oven to 350 degrees.

Step 2Whisk all of your dry ingredients together in a large bowl. In a separate medium bowl whisk your eggs and oil together. Then add your grated apple and cinnamon. Combine with your dry ingredients. After this it looked a little dry so I chose to add 3 tablespoons milk. It turned out amazingly delicious!

Step 3Put muffin cups into your muffin pan or just grease your pan. Fill cups 3/4 full. Bake about 22-27 minutes. I would continuously check to see if they're done because not all ovens cook exactly the same. Insert a toothpick, when it emerges mostly clean they are done. Let cool about 5-7 minutes. Then enjoy!
