- 2 large eggs
- 3/4 cup sugar
- 1/4 cup oil
- 1 teaspoon vanilla
- 2 cups granny smith apples (chopped)
- 1 1/2 cups carrots (finely shredded)
- 2 cups flour (sifted)
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1 teaspoon salt
How To Make apple carrot muffins

Step 1Preheat oven to 325 degrees.

Step 2Combine eggs, sugar, oil and vanilla in mixer bowl. Beat until well blended.

Step 3Stir in apples, carrots and sifted dry ingredients.

Step 4Fill greased muffin cups 2/3 full. Bake for 20-25 minutes or until golden brown.
