amazing blueberry muffins
This recipe comes from a very old book I received in the 70's. I make these muffins about every week for our co-op coffee haus and they are always well received. They are my daughters and Harvey's(my husband), favorite. This muffin is the most requested at our co-op coffee haus.

Ingredients
- 2 1/2 cups flour
- 3/4 cup sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup plain yogurt, room temperature
- 2 - eggs
- 1 teaspoon pure vanilla extract
- 1 1/2 cups fresh, or ( i use frozen blueberries)
- 1/2 cup butter
How To Make amazing blueberry muffins

Step 1In a large bowl, mix flour, sugar, baking powder, baking soda, soda and salt. With a pastry blender, cut in butter until mixture resembles fine crumbs.

Step 2In a small bowl, stir yogurt until creamy. Blend in eggs and vanilla. Pour all at once into flour mixture. Stir until flour mixture is just moistened. Gently fold in blueberries.

Step 3Fill prepared muffin tins about 2/3 full. Bake at 400 F. degrees . Time: 15-20 minutes until golden brown. Remove from pans and serve warm.
