amazing blueberry muffins

This recipe comes from a very old book I received in the 70's. I make these muffins about every week for our co-op coffee haus and they are always well received. They are my daughters and Harvey's(my husband), favorite. This muffin is the most requested at our co-op coffee haus.

Ingredients

  • 2 1/2 cups flour
  • 3/4 cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup plain yogurt, room temperature
  • 2 - eggs
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups fresh, or ( i use frozen blueberries)
  • 1/2 cup butter

How To Make amazing blueberry muffins

  • Step 1
    In a large bowl, mix flour, sugar, baking powder, baking soda, soda and salt. With a pastry blender, cut in butter until mixture resembles fine crumbs.
  • Step 2
    In a small bowl, stir yogurt until creamy. Blend in eggs and vanilla. Pour all at once into flour mixture. Stir until flour mixture is just moistened. Gently fold in blueberries.
  • Step 3
    Fill prepared muffin tins about 2/3 full. Bake at 400 F. degrees . Time: 15-20 minutes until golden brown. Remove from pans and serve warm.
