Ingredients

  • 1/2 cup coconut flour
  • 1/4 cup cornstarch
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 4 large eggs
  • 1/3 cup honey
  • 1/2 cup almond butter
  • 1/4 cup butter, softened
  • 1/4 cup milk
  • 1 teaspoon vanilla
  • 1/2 cup semi-sweet chocolate chips

How To Make almond butter muffins

  • Step 1
    Preheat oven to 375 degrees. Line muffin pan with paper liners.
  • Step 2
    Whisk together coconut flour, cornstarch, baking powder and baking soda.
  • Step 3
    Beat eggs, honey, almond butter, butter, milk and vanilla until well combined.
  • Step 4
    Add the dry ingredients to the wet ingredients, blend until combined.
  • Step 5
    Stir in chocolate chips.
  • Step 6
    Fill paper muffin cups with batter.
  • Step 7
    Bake for 15 -18 minutes.
  • Step 8
    Allow to cool in pan 10 minutes before transferring to wire rack to cool.
