12 Muffins


  • 1/2 c
    coconut flour
  • 1/4 c
  • 1 tsp
    baking powder
  • 1/2 tsp
    baking soda
  • 4 large
  • 1/3 c
  • 1/2 c
    almond butter
  • 1/4 c
    butter, softened
  • 1/4 c
  • 1 tsp
  • 1/2 c
    semi-sweet chocolate chips

How to Make Almond Butter Muffins


  1. Preheat oven to 375 degrees. Line muffin pan with paper liners.
  2. Whisk together coconut flour, cornstarch, baking powder and baking soda.
  3. Beat eggs, honey, almond butter, butter, milk and vanilla until well combined.
  4. Add the dry ingredients to the wet ingredients, blend until combined.
  5. Stir in chocolate chips.
  6. Fill paper muffin cups with batter.
  7. Bake for 15 -18 minutes.
  8. Allow to cool in pan 10 minutes before transferring to wire rack to cool.
  9. Enjoy!
