1 cwhole wheat or whole spelt flour

2 Tbspwheat germ

2 Tbspwheat bran

1 1/2 tspbaking soda

1½ cquick oats

1 cdried cranberries

zest of 4 oranges, or about 2 tablespoons

1 corange juice

1/4 colive oil – i used extra-virgin

1/4 choney

1 tspvanilla extract

1egg, room temperature

1/2 cboiling water

coarse sugar for sprinkling on top (optional)
How To Make 100% whole grain cranberry orange oat muffins

1In a large bowl, mix together the dry ingredients, including the zest. Add the wet ingredients to the dry mixture, stirring in the boiling water last.

2Preheat the oven to 375°F / 190°C and line 12 muffin cups with liners. After mixing everything together, the batter needs to sit 15 minutes in the bowl, so if your oven only takes 5 minutes to preheat, let your batter sit 10 minutes first.

3Fill your muffin liners. In my pan, I have to fill them all the way to the top. Sprinkle with coarse sugar, if using. Bake for about 16 – 18 minutes or until a toothpick inserted in the middle comes out clean. Remove muffins from pan and cool on a wire rack.
