Ingredients

  • 2 cups buttermilk complete pancake mix
  • 2 tablespoons sugar
  • 1/4 teaspoon cinnamon
  • 1.5 cups water
  • 1 cup strawberries, sliced
  • 8 ounces strawberry or vanilla lowfat yogurt

How To Make yogurt-topped strawberry pancakes

  • Step 1
    Heat griddle or skillet to 375.
  • Step 2
    Grease lightly with oil.
  • Step 3
    In medium bowl, combine pancake mix, sugar, cinnamon and water; stir just until large lumps disappear.
  • Step 4
    Fold in strawberries.
  • Step 5
    For each pancake, pour 1/4 cup batter onto hot griddle.
  • Step 6
    Cook 1-1 1/2 minutes, turning when edges look cooked and bubbles begin to break on surface.
  • Step 7
    Continue to cook 1-1 1/2 minutes or until golden brown.
  • Step 8
    Spoon yogurt over each serving.
  • Step 9
    If desired, garnish with additional strawberries.
