This recipe is a family recipe passed from my Great Grandmother, and ending up with me. My Great Grandfather came from Ireland and I'm pretty sure the recipe came from his side of the family. It's easy and uses those leftover mashed potatoes. You can eat them plain with just butter or toast them, butter and brown sugar on a split cake, and enjoy!

Ingredients

  • 1 cup mashed potatoes
  • 2 tablespoons shortening
  • 2 cups flour, 1/2 wheat-1/2 white
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder

How To Make potato cakes

  • Step 1
    Preheat oven to 400 degrees. Blend all ingredients with a pastry blender until crumbly.
  • Step 2
    Add milk (about 1/4 to 1/2 cup) until the dough sticks together, but is not wet. If it's too wet add a little more flour.
  • Step 3
    Pat into a circle on a cutting board until you have about 1/2 inch thickness. Cut into 8 even pieces and place individually on a cookie sheet.
  • Step 4
    Bake for 30 minutes. Cut in half, butter and brown sugar, or cool completely and store in air-tight container in refrigerator.
