I make these on holidays when we have company or whenever my kids come to visit. They all rave about how good they are and my son in law can't believe they contain buttermilk, something he doesn't like....tee hee.

Ingredients

  • 1 package active dry yeast
  • 1/4 cup warm water
  • 4 cups all purpose flour
  • 2 tablespoons baking powder
  • 2 teaspoons baking soda
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 6 - eggs
  • 1 quart buttermilk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla

How To Make overnight pancakes

  • Step 1
    In small bowl dissolve yeast in water; let stand for 5 minutes. Meanwhile, in large bowl, combine the dry ingredients. Beat buttermilk, eggs, and oil: stir into dry ingredients just until moistened. Stir in yeast mixture and vanilla. Cover and refrigerate overnight. Stir and fry on lightly oiled griddle. Makes about 2 1/2 dozen medium sized pancakes.
