Make sure you use buttermilk & not just milk with vinegar. It gives it a much better fluffy consistency. My celiac husband loves these much better than the already made frozen ones you buy!

- 1 1/4 cups white rice flour
- 2 teaspoons baking powder
- 1 teaspoon soda
- 1/2 teaspoon salt
- 1 1/4 cups buttermilk ( no substitutions)
- 1/4 cup veg oil
- 2 - eggs
- 1/2 teaspoon vanilla

Step 1add oil to the buttermilk~stir. In large bowl, mix dry ingredients. Add btrmlk/oil mixture & eggs. Stir up well~ & cook!
