I'm a family and couples Therapist who besides Psychology, loves to cook for a crowed as well just for my family. Since a long time family members are dealing with some food intolerance, than I'm always looking for recipes can attend their needs. Ingredients For gluten free blender pancakes

  • 1 c
    buttermilk/ or substitute
  • 2
    eggs
  • 1 Tbsp
    cooking oil
  • 2 Tbsp
    brown sugar or any cooking sweetener
  • 1/2 tsp
    baking soda
  • 1 tsp
    baking powder
  • 1/2 c
    rice flour
  • 1/2 c
    potato flour
  • 1/4 c
    cornmeal

How To Make gluten free blender pancakes

  • 1
    Place milk, eggs and oil in blender.
  • 2
    Blend at low speed.
  • 3
    Add sugar or sweetener and dry ingredients.
  • 4
    Pour 6" rounds into greased skillet or non-stick pan.
  • 5
    Flip when bubbles appear throughout and edge of cake looks dull.
  • 6
    Add more milk for thinner pancakes or more flour for thicker ones.
  • 7
    You can add any fresh or frozen fruit or nuts to the dough
