gingerbread pancakes

It was the first time I was hosting my family's Christmas morning festivities and I wanted to make something special. This is a conglomeration of several recipes including, gingerbread, waffles, pancakes, bread, and a few glimpses of holiday ideas I caught from various food channels. I made them a few times with a tweak here and there until I was VERY happy with the result. In the process I found that they are almost as good frozen then reheated (though they loose a bit of their fluffiness). I also learned that my 2 year old LOVED them! This is a recipe that everyone can add their own twist to make it their own. Enjoy!

Ingredients
- 1 1/2 cups all purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 - egg
- 1 teaspoon vanilla extract
- 1/4 cup molasses
- 1 1/2 cups water
- 1 cup maple syrup
- 1 - 2 inch or so long orange peel
- 3 - cloves
How To Make gingerbread pancakes

Step 1Heat syrup over low/ medium. Poke cloves into orange peel and drop into syrup. Cook while preparing pancakes.

Step 2Whisk together dry ingredients and set aside. Beat the egg in a separate bowl with the vanilla and molasses until smooth. Whisk in water. Stir the molasses mixture into the dry ingredients until combined.

Step 3Spray griddle with non-stick cooking spray and heat to medium. Pour mix to desired size cakes and flip when bubbles form and edges are dry.

Step 4Remove peel and cloves from syrup and serve!
