Flat Bread Pizza

A really quick and easy appetizer to impress your company with. Make sure to have plenty because it disappears fast!

pizza dough (i use pillsbury)
olive oil
1 - 2 clove
garlic, halved (i like lots of garlic!)
1 c
feta cheese
1/4 c
grated parmesan cheese
3 Tbsp
minced fresh mint (or basil)
1 Tbsp
lemon zest
red chili-pepper flakes


1Stretch dough into a large rectangle and cut in half. Drizzle both halves with olive oil and bake on greased cookie sheet at 450F until golden brown, about 10 minutes. While hot, rub each flatbread with garlic. Top with feta and Parmesan and bake until cheese melts, about 3 minutes. Remove from oven and sprinkle with mint, zest and a few shakes of chili-pepper flakes.
