edna's ferdans

We always had HUGE family reunions on my mother's side of the family. My Grandmother was one of 8 children---2 sets of twins! There were lots of great eats and recipes were always exchanged. This is a recipe my mom got from my Great Aunt Edna at one of those reunions. It's delicious.

Ingredients
- 2 cups buttermilk
- 2 cups flour
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 3 - large eggs, seperated
- 5 tablespoons sugar
- 1/2 cup lingonberries or raisins* see note below
- - powdered sugar for sprinkling
- - vegetable oil for frying
How To Make edna's ferdans

Step 1Mix dry ingredients together in a bowl.

Step 2beat egg yolks, sugar and buttermilk together in a bowl.

Step 3combine the dry ingredients with the wet.

Step 4*at this point, optional add-ins go in: 1/2 tsp. orange zest with 1/2 cup lingonberries, or; 1/2 tsp. cardamon with 1/2 cup raisins.

Step 5beat egg whites until stiff and fold into the batter. let stant 5 to 10 minutes.

Step 6Heat a large cast iron skillet and add enough vegetable oil to fry Ferdans. Drop by 1 tablespoon each in the skillet and fry til golden (like pancakes).

Step 7sprinkle with powdered sugar and enjoy
