- 1/2 cup soy flour
- 1/2 cup whole wheat flour
- 1/2 cup unbleached all-purpose flour
- 2 tablespoons wheat germ
- 2 tablespoons powdered milk
- 2 tablespoons unprocessed oat bran
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- - grated peel of one orange
- 2 - eggs, separated
- 1/2 cup plain, nonfat yogurt
- 1/4 cup oil
- 1 tablespoon molasses
- 1 tablespoon honey
- 1/2 - orange juice
How To Make desperately healthy pancakes

Step 1Combine the first 10 ingredients.

Step 2Reserve the egg whites and add the egg yolks and the remaining ingredients to the flour mixture in a food processor, blend well.

Step 3Beat the egg whites until stiff; fold into the pancake mixture.

Step 4Cook on a 300 degree griddle, for 2-1/2 minutes on one side and 1 minute on the other.

Step 5Makes about 36 3-inch cakes.
