This is such a great comfort bread to eat anytime and one of my favorites, and it freezes well.

  • 3 c
    all purpose flour
  • 1 tsp
    baking soda
  • 1 tsp
  • 1 Tbsp
  • 2 c
  • 4
    eggs, beaten
  • 1 1/4 c
    canola oil
  • 1
    16oz. pkg. frozen sliced strawberries, thawed & chopped small
  • 1 c
    chopped nuts (pecans)

  • 1/4 c
    thawed srawberries, chopped small
  • 3 oz
    cream cheese
  • 1 c
    powdered sugar
  • 1 tsp
    pure vanilla extract

How to Make Stawberry Nut Bread W/ Strawberry Creamy Glaze


  1. Preheat your oven to 350. Mix and sift dry ingredients into large bowl. Mix your eggs, oil. Slowly add your dry ingredient.
  2. Set a side 1/4 cup of these strawberries after you chopped them small. Now add the rest of your chopped strawberries and pecans and blend 30 seconds. Pour batter into your two greased loaf pans. Bake 60 minutes or until both loaves are baked and tests done in the center.
  3. Remove from oven and let them cool 20 minutes then pour the glaze all over top and let it rundown the sides. Let bread & glaze sit 30 minutes to set it just right. 30 minutes to wait, this is by far the toughest step in this recipe! 8) I hope you enjoy these lovely breads!
  4. *If you are going to freeze these loaves, freeze them unglazed. Then thaw and glaze them before serving.
  5. Strawberry Cream Cheese Glaze-In your mixer bowl add your chopped strawberries, cream cheese, powdered sugar (may need more if you like it thicker) and lastly your vanilla. Blend until creamy 3 or 4 minutes.
