This is how they make traditional banana bread in Colombia...with cinnamon. I found this at Sparkpeople while looking for South American recipes for Culinary Quest 2014. I did some tweaking for an easier read based on how I make my own banana bread.

Ingredients

  • 1 cup all purpose flour
  • 1/2 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 cup unsalted butter
  • 2 - bananas, mashed
  • 1/2 cup brown sugar
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice
  • 1 - egg, beaten
  • 1/2 cup pecans, chopped

How To Make south american banana bread

  • Step 1
    Preheat oven to 350 degrees
  • Step 2
    Cream softened butter and brown sugar. Add the bananas, salt, cinnamon, lemon juice, and the beaten egg. Beat wet ingredients well.
  • Step 3
    In a separate, small bowl mix the flours and the baking powder.
  • Step 4
    Then carefully mix the dry into the wet banana mixture, but DO NOT over mix - just stir it carefully enough to incorporate the flour.
  • Step 5
    Lastly, add the chopped pecans.
  • Step 6
    Bake & check for doneness at 30 minutes.
