This is how they make traditional banana bread in Colombia...with cinnamon. I found this at Sparkpeople while looking for South American recipes for Culinary Quest 2014. I did some tweaking for an easier read based on how I make my own banana bread.

Ingredients
- 1 cup all purpose flour
- 1/2 cup whole wheat flour
- 1 teaspoon baking powder
- 1/2 cup unsalted butter
- 2 - bananas, mashed
- 1/2 cup brown sugar
- 1/4 teaspoon salt
- 1 teaspoon cinnamon
- 1 tablespoon lemon juice
- 1 - egg, beaten
- 1/2 cup pecans, chopped
How To Make south american banana bread

Step 1Preheat oven to 350 degrees

Step 2Cream softened butter and brown sugar. Add the bananas, salt, cinnamon, lemon juice, and the beaten egg. Beat wet ingredients well.

Step 3In a separate, small bowl mix the flours and the baking powder.

Step 4Then carefully mix the dry into the wet banana mixture, but DO NOT over mix - just stir it carefully enough to incorporate the flour.

Step 5Lastly, add the chopped pecans.

Step 6Bake & check for doneness at 30 minutes.
