This is how they make traditional banana bread in Colombia...with cinnamon. I found this at Sparkpeople while looking for South American recipes for Culinary Quest 2014. I did some tweaking for an easier read based on how I make my own banana bread.

  • 1 c
    all purpose flour
  • 1/2 c
    whole wheat flour
  • 1 tsp
    baking powder
  • 1/2 c
    unsalted butter
  • 2
    bananas, mashed
  • 1/2 c
    brown sugar
  • 1/4 tsp
  • 1 tsp
  • 1 Tbsp
    lemon juice
  • 1
    egg, beaten
  • 1/2 c
    pecans, chopped

How to Make South American Banana Bread


  1. Preheat oven to 350 degrees
  2. Cream softened butter and brown sugar. Add the bananas, salt, cinnamon, lemon juice, and the beaten egg. Beat wet ingredients well.
  3. In a separate, small bowl mix the flours and the baking powder.
  4. Then carefully mix the dry into the wet banana mixture, but DO NOT over mix - just stir it carefully enough to incorporate the flour.
  5. Lastly, add the chopped pecans.
  6. Bake & check for doneness at 30 minutes.
