This red velvet recipe I came across in a book has no cocoa in it. It's very soft and the glaze with cream cheese is just enough.

butter, softened
1/2 c
butter crisco
3 c
granulated sugar
8 medium
1 Tbsp
vanilla extract
1oz. bottle red food coloring
1 tsp
white vinegar
3 c
cake flour
1/4 tsp
baking soda
1 c


1 1/2 c
confectioners sugar
3 Tbsp
milk or cream (more if needeed for desired pouring consistency
2 oz
cream cheese

How to Make Red Velvet Loaves W/ Cream Cheese Glaze


  • 1Preheat oven to 325. In an electric mixer, cream butter and shortening until smooth. Gradually add sugar and beat until light and fluffy, approximately 10 minutes.
  • 2Add eggs one at a time, beating well after each addition. Stir in vanilla extract, food coloring, and vinegar, blending well.
  • 3Sift flour and baking soda together. Add alternately with buttermilk, beginning and ending with flour mixture. Pour into 2 greased loaf pans (I use glass) Bake at 325 for 1 hour 15 minutes or until loaves test done in center. Cool in pan for 10 minutes before removing cake. Cool completely before glazing.
  • 4Glaze-In a bowl place confectioners sugar, milk and cream cheese and mix with hand mixer until blended thoroughly but pourable (may need more milk) I then drizzle all over and back and forth. Let set for 1 hour before slicing.
