red velvet loaves w/ cream cheese glaze

This red velvet recipe I came across in a book has no cocoa in it. It's very soft and the glaze with cream cheese is just enough.

Ingredients

  • 3 sticks butter, softened
  • 1/2 cup butter crisco
  • 3 cups granulated sugar
  • 8 medium eggs
  • 1 tablespoon vanilla extract
  • 1 - 1oz. bottle red food coloring
  • 1 teaspoon white vinegar
  • 3 cups cake flour
  • 1/4 teaspoon baking soda
  • 1 cup buttermilk
  • CREAM CHEESE GLAZE
  • 1 1/2 cups confectioners sugar
  • 3 tablespoons milk or cream (more if needeed for desired pouring consistency
  • 2 ounces cream cheese

How To Make red velvet loaves w/ cream cheese glaze

  • Step 1
    Preheat oven to 325. In an electric mixer, cream butter and shortening until smooth. Gradually add sugar and beat until light and fluffy, approximately 10 minutes.
  • Step 2
    Add eggs one at a time, beating well after each addition. Stir in vanilla extract, food coloring, and vinegar, blending well.
  • Step 3
    Sift flour and baking soda together. Add alternately with buttermilk, beginning and ending with flour mixture. Pour into 2 greased loaf pans (I use glass) Bake at 325 for 1 hour 15 minutes or until loaves test done in center. Cool in pan for 10 minutes before removing cake. Cool completely before glazing.
  • Step 4
    Glaze-In a bowl place confectioners sugar, milk and cream cheese and mix with hand mixer until blended thoroughly but pourable (may need more milk) I then drizzle all over and back and forth. Let set for 1 hour before slicing.
