pumpkin bread
This is one of the easiest breads to make as you only have one messy bowl to clean. I give this bread out to friends, family and neighbors at Thanksgiving and Christmas.

Ingredients
- 1/3 cup canola oil
- 1 cup pumpkin, canned or cooked
- 1 1/2 cups sugar
- 2 1/3 cups buttermilk biscuit mix
- 2 teaspoons cinnamon
- 1/2 cup raisins
- 3 - eggs
How To Make pumpkin bread

Step 1Pre-heat oven to 350

Step 2Grease bottom of large loaf pan (I also flour it)

Step 3Mix all ingredient, except for raisins, in a large bowl with a fork. The recipe says NOT to sift biscuit mix but I don't like coming across small bits that didn't incorporate so I sift)

Step 4Beat vigorously for 1 minute

Step 5Stir in raisins if desired. (I have tried it both ways and prefer my bread raisin-free)

Step 6Bake 45-55 minutes until tester comes out clean

Step 7Cool 5-10 minutes and then run knife around to edges.

Step 8Take out of pan and place on cooling rack -- cool completely
