I begged and begged for this recipe. Finally, my neighbor gave it to me this weekend. It is a wonderful coffee cake.

Ingredients
- 2/3 cup butter, softened
- 1 cup sugar or splenda
- 3 - eggs, separated
- 1 teaspoon vanilla
- 2 1/2 cups flour
- 3 tablespoons poppy seeds
- 3/4 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- FILLING
- 1/3 cup brown sugar, firmly packed
- 4 teaspoons cinnamon
- 1/2 teaspoon instant coffee powder
How To Make poppy seed coffee cake

Step 1Cream butter and sugar using mixer in a large bowl, then beat in egg YOLKS and vanilla.

Step 2Combine flour, poppy seeds, baking powder, baking soda and salt; add to creamed mixture alternately with buttermilk.

Step 3In small bowl with mixer, beat egg whites until stiff peaks form; fold into batter.

Step 4Pour half of the batter into a greased 13 x 9 pan; combine filling ingredients and sprinkle over batter.

Step 5Carefully top with remaining batter and bake at 350 degrees for 35-40 minutes or until toothpick inserted in center comes out clean; cool on wire rack and serve.
