2/3 cbutter, softened

1 csugar or splenda

3eggs, separated

1 tspvanilla

3 Tbsppoppy seeds

3/4 tspbaking powder

1/2 tspsalt

FILLING
-
1/3 cbrown sugar, firmly packed

4 tspcinnamon

1/2 tspinstant coffee powder
How to Make Poppy Seed Coffee Cake
- Cream butter and sugar using mixer in a large bowl, then beat in egg YOLKS and vanilla.
- Combine flour, poppy seeds, baking powder, baking soda and salt; add to creamed mixture alternately with buttermilk.
- In small bowl with mixer, beat egg whites until stiff peaks form; fold into batter.
- Pour half of the batter into a greased 13 x 9 pan; combine filling ingredients and sprinkle over batter.
- Carefully top with remaining batter and bake at 350 degrees for 35-40 minutes or until toothpick inserted in center comes out clean; cool on wire rack and serve.
