peanut butter banana bread

This is a dense, heavy and moist loaf with a fine crumb. It says the chocolate and peanut butter chips are optional but we all know they really aren't!

Ingredients

  • 3 cups all purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 1/2 teaspoons salt
  • 1 teaspoon ground cinnamon
  • 4 - small, very ripe, bananas
  • 3/4 cup smooth peanut butter
  • 1 1/2 teaspoons pure vanilla
  • 1 1/2 tablespoons milk
  • 3/4 cup butter(softened)
  • 1 1/2 cups white sugar
  • 3 - eggs(large)
  • 1 cup semi-sweet chocolate chips (optional)
  • 1/2 cup peanut butter chips (optional)

How To Make peanut butter banana bread

  • Step 1
    Preheat oven to 325 degrees. Very generously grease 2 8"X4" loaf pans with Crisco (I use butter flavored).
  • Step 2
    Stir together first 5 ingredients in a small bowl. Set Aside.
  • Step 3
    Place next 4 ingredients in another bowl. Set aside.
  • Step 4
    In a large bowl, with a mixer, cream butter and sugar together for at least 3 minutes until light and fluffy (the yellow color should be much lighter when done). Add the eggs, one at a time, beating well and scraping down the bowl after each one.
  • Step 5
    Using the mixer, blend the banana bowl ingredients and clean off the beaters, you are done with the mixer.
  • Step 6
    Stir the banana mixture into the butter mixture with a wooden spoon or use my favorite, a silicone spoonula!
  • Step 7
    Sift all the flour mixture into the big bowl and stir just until blended.
  • Step 8
    Fold in all the chips and put batter equally into the prepared loaf pans.
  • Step 9
    Bake approx. 70 minutes or until a toothpick inserted into center comes out clean.
  • Step 10
    Cool on a rack, in the pan, for 10 minutes before removing from pan to cool completely (a couple of hours at least) before slicing.
