This is a dense, heavy and moist loaf with a fine crumb. It says the chocolate and peanut butter chips are optional but we all know they really aren't!

3 c
all purpose flour
1 1/2 tsp
baking powder
1 1/2 tsp
baking soda
1 1/2 tsp
1 tsp
ground cinnamon
small, very ripe, bananas
3/4 c
smooth peanut butter
1 1/2 tsp
pure vanilla
1 1/2 Tbsp
3/4 c
1 1/2 c
white sugar
1 c
semi-sweet chocolate chips (optional)
1/2 c
peanut butter chips (optional)

How to Make Peanut Butter Banana Bread


  • 1Preheat oven to 325 degrees. Very generously grease 2 8"X4" loaf pans with Crisco (I use butter flavored).
  • 2Stir together first 5 ingredients in a small bowl. Set Aside.
  • 3Place next 4 ingredients in another bowl. Set aside.
  • 4In a large bowl, with a mixer, cream butter and sugar together for at least 3 minutes until light and fluffy (the yellow color should be much lighter when done). Add the eggs, one at a time, beating well and scraping down the bowl after each one.
  • 5Using the mixer, blend the banana bowl ingredients and clean off the beaters, you are done with the mixer.
  • 6Stir the banana mixture into the butter mixture with a wooden spoon or use my favorite, a silicone spoonula!
  • 7Sift all the flour mixture into the big bowl and stir just until blended.
  • 8Fold in all the chips and put batter equally into the prepared loaf pans.
  • 9Bake approx. 70 minutes or until a toothpick inserted into center comes out clean.
  • 10Cool on a rack, in the pan, for 10 minutes before removing from pan to cool completely (a couple of hours at least) before slicing.
