Ingredients

  • 1 1/2 cups flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon pumpkin pie spice
  • 2 - eggs
  • 2/3 cup brown sugar, firmly packed
  • 1 cup applesauce, sweetened
  • 1/3 cup vegetable oil
  • 1/2 teaspoon vanilla
  • 1 1/2 cups quick-cooking oats, uncooked
  • 1 1/2 cups raisins (soaked in boiling water for 5 minutes and drained)

How To Make oatmeal raisin bread

  • Step 1
    Combine first 6 ingredients in a large bowl and set aside.
  • Step 2
    In another large bowl, beat eggs with brown sugar until fluffy.
  • Step 3
    Stir in applesauce, flour mixture and then remaining ingredients until just blended.
  • Step 4
    Pour into a well-greased 9x5x3 inch loaf pan.
  • Step 5
    Bake at 350 degrees for 65 minutes or until a toothpick comes out clean.
  • Step 6
    Cool for 5 minutes and remove from pan onto a rack. Cool completely. Store in refrigerator for al least a day. Slices better cold.
