Ingredients

1 1/2 c
flour
1/2 tsp
salt
1 tsp
baking soda
1 tsp
baking powder
1/2 tsp
cinnamon
1/2 tsp
pumpkin pie spice
2
eggs
2/3 c
brown sugar, firmly packed
1 c
applesauce, sweetened
1/3 c
vegetable oil
1/2 tsp
vanilla
1 1/2 c
quick-cooking oats, uncooked
1 1/2 c
raisins (soaked in boiling water for 5 minutes and drained)

Step-By-Step

1Combine first 6 ingredients in a large bowl and set aside.
2In another large bowl, beat eggs with brown sugar until fluffy.
3Stir in applesauce, flour mixture and then remaining ingredients until just blended.
4Pour into a well-greased 9x5x3 inch loaf pan.
5Bake at 350 degrees for 65 minutes or until a toothpick comes out clean.
6Cool for 5 minutes and remove from pan onto a rack. Cool completely. Store in refrigerator for al least a day. Slices better cold.
