  • 1/2 tsp
  • 1 tsp
    baking soda
  • 1 tsp
    baking powder
  • 1/2 tsp
  • 1/2 tsp
    pumpkin pie spice
  • 2
  • 2/3 c
    brown sugar, firmly packed
  • 1 c
    applesauce, sweetened
  • 1/3 c
    vegetable oil
  • 1/2 tsp
  • 1 1/2 c
    quick-cooking oats, uncooked
  • 1 1/2 c
    raisins (soaked in boiling water for 5 minutes and drained)

How to Make Oatmeal Raisin Bread


  1. Combine first 6 ingredients in a large bowl and set aside.
  2. In another large bowl, beat eggs with brown sugar until fluffy.
  3. Stir in applesauce, flour mixture and then remaining ingredients until just blended.
  4. Pour into a well-greased 9x5x3 inch loaf pan.
  5. Bake at 350 degrees for 65 minutes or until a toothpick comes out clean.
  6. Cool for 5 minutes and remove from pan onto a rack. Cool completely. Store in refrigerator for al least a day. Slices better cold.
